Triple Layer Lemon Pie

First things first. I am a college student, which means I have very little money to cook with each week. And although I should probably skip making desserts to save some money, THAT’S not going to happen. I am not a big pie fan, but I love chocolate, lemon, and pumpkin pies. This is a very simple, inexpensive lemon pie that can be whipped up in minutes…literally. I keep these ingredients in my kitchen almost all the time just in case I am needing a quick dessert to make.

Triple Layer Lemon Pie

  • 2 (3.4 oz) packages lemon instant pudding
  • 2 c. cold milk
  • 1 T lemon juice
  • 1 graham cracker pie crust
  • 1 tub cool whip

Beat pudding mixes, milk & lemon juice with whisk for 2 minutes. Mixture will be thick. Spread 1 1/2 c. of pudding onto crust. Whisk 1/2 of the cool whip into remaining pudding mixture; spread over pudding layer in crust. Top with remaining cool whip. Refrigerate 3 hours.
